just got back from dan's band/crashing at caiti's place and smashing into a chair in the middle of their hallway and then trying to find a lightbulb to put in the light because caiti's brother stole the lightbulb that was originally there.

disclaimer: not actually a freak

so after the interesting events of the day plus a couple of heavy duty painkillers to keep the ills at ease i decided to make a pudding. but not just any pudding. lemon delicious pudding. this thing is amazing. fluffy sponge pudding on top of creamy lemon sauce. omg it's so delicious. the recipe i had was no good (stephanie alexander; too sweet, not enough pudding and too much sauce) so i decided to make my own.

rihana’s lemon delicious pudding

60 g butter 2 lemons ¾ cup caster sugar 6 tbs self-raising flour 3 eggs 1 ½ cups milk

preheat the oven to 180ºc. butter a pudding basin.



cream butter, sugar and the zest of one lemon in a large bowl.



separate the eggs and beat the yolks into the butter mixture.



stir in the flour and milk, alternating between the two, to form a smooth batter. juice the two lemons and stir into the batter.



beat the egg whites until firm and then fold gently into the mixture.

transfer the pudding into the pudding basin. fill a baking dish halfway up with water and place the basin inside. bake for an hour or until golden brown – the pudding will not be firm.

enjoy – serve with icecream or cream. and before you say, "girl, that is one ugly-ass pudding," you really should taste it.
